Why they submitted this recipe: This is one of our favorite family recipes and is regularly requested for birthdays and special occasions. We all make our own lettuce wraps at the table and enjoy talking and relaxing during the meal.听

Ingredients

  • 28 oz extra firm tofu, drained
  • 4 cups fresh basil leaves, roughly chopped into 1鈥 ribbons
  • 6 cloves garlic peeled
  • 12 green or red Thai chilis or 2-3 serrano chilis
  • 4 Tbsp vegan fish sauce*
  • 2 Tbsp vegan oyster sauce*
  • 5 Tbsp brown sugar
  • 2 tsp white vinegar
  • 8 shallots halved and sliced thin
  • 4 Tbsp vegetable oil
  • 1 cup roasted peanuts, roughly chopped
  • 2 lb bib, romaine or leaf lettuce, washed, whole leaves separated from the hearts
  • 3 limes, 1 juiced and 2 cut in wedges for serving red pepper flakes for serving

Directions

  1. Microwave tofu on high for 2 minutes. Break into 2鈥 pieces, spread tofu pieces over towel lined baking sheet and let drain for 20 min.
  2. Cover tofu with paper towel and press dry. Season with salt and pepper.
  3. While tofu is draining, make basil mixture. In a food processor, finely chop 2 cup basil, garlic, chilis scraping down sides of bowl as needed. Transfer 2 Tbsp of this to a bowl and stir in fish sauce, oyster sauce, sugar and vinegar.
  4. Transfer remaining basil mixture to a large nonstick skillet.
  5. Pulse tofu in the same food processor bowl until coarsely chopped (3-4 pulses) scraping down sides of bowl as needed.
  6. Stir tofu, shallots and oil into the skillet with the basil mixture. Cook over medium heat stirring occasionally until tofu and shallots are lightly browned ~20 minutes.
  7. Mixture will start to sizzle after ~2min on medium heat, adjust temperature as needed.
  8. Add reserved basil mixture (with sugar, fish and oyster sauce) to skillet and cook until the tofu mixture is well coated ~1-2 minutes.
  9. Add in peanuts and the remaining fresh basil leaves. Cook an additional 1-2 minutes until basil is wilted.
  10. Juice 陆 a lime over the top and mix.
  11. Serve with whole lettuce leaves, jasmine rice, red pepper flakes and lime wedges.
  12. *if vegan fish sauce and oyster sauce are not available, 3 Tbsp soy sauce can be substituted. Our family serves this with frozen vegetarian spring rolls that we heat in the oven and Mae Ploy sweet chili sauce.
