Why they submitted this recipe:This dish has become a homecoming tradition in our house 鈥 every time Merced comes home from college, she requests it without fail. It first found its way into our kitchen during a particularly hectic season when fast, flavorful meals were a necessity. Originally inspired by a Green Chef meal kit, I couldn鈥檛 resist making a few tweaks to lighten it up, all while keeping the bold, mouthwatering flavors intact. The fragrant mix of garlic, ginger, and savory goodness instantly transports us to a cozy family dinner, even when life feels chaotic. It鈥檚 a comforting reminder that a simple, vibrant bowl can bring everyone to the table 鈥 and keep them coming back for more. Whether you鈥檙e cooking for friends or just for yourself, this colorful, flavor-packed meal is guaranteed to brighten your day.

Korean Bulgogi Bowl

Ingredients

  • 2 tsp sesame oil
  • 24 ounces 95% lean ground beef
  • 6 garlic cloves-minced
  • 2 tbsp fresh ginger
  • 2 tbsp onion
  • 2 cups broccoli
  • 2 cups red bell peppers
  • 2 cups red or green cabbage (can buy pre-shredded for convenience)
  • 1 tsp black pepper
  • 录 cup rice wine vinegar
  • 录 cup tamari (gluten-free soy sauce)
  • 陆 cup vegetable broth
  • divided 1 tbsp brown sugar
  • 1 tbsp sesame seeds-black and white
  • 1 tsp red pepper flakes

Directions

  1. Clean and chop broccoli, red peppers and cabbage. Mince garlic, onion and fresh ginger.
  2. In a small bowl, add the sesame oil, rice wine vinegar, vegetable broth, tamari and brown sugar and mix well. Set aside.
  3. In a large skillet, add the ground beef and use a spatula or my favorite Pampered Chef 鈥淢ix 鈥楴 Chop鈥 (Cook Tip!) to break it up into small pieces in the skillet. Cook for 5 minutes and then drain the excess fat.
  4. Add the diced onion, black pepper, red pepper flakes, minced garlic and fresh ginger. Stir and cook for 2-3 minutes until the beef is no longer pink.
  5. Pull the beef mixture off the heat and pour it into a bowl.
  6. In the same pan used to cook the meat, add 录 cup vegetable broth, broccoli, red bell pepper and cabbage, and cook on medium heat for about 5 minutes, until the vegetables are softened.
  7. Finally, add the beef mixture back into the vegetables and the sauce
  8. Mix well and cook for 2-3 minutes. Top with toasted sesame seeds.
