Recipe yields: 500 grams cauliflower
Why they submitted this recipe: It’s easy to make, fulfilling and healthy. It’s a French recipe from a French and my kids ask for it in winter times as a memory from their godmother.

Ingredients
- 1 cauliflower
- 50 grs butter
- 30 gr flour
- 1/4 liter milk
- 2 tbs sour cream or crème fraiche
- 100 grs grated cheese preferably emmental or comté ,
- salt, pepper, nutmeg
Directions
- Steam cauliflower until tender.
- Mix flour and butter in a pan, heating it slowly and as it starts to become a paste; add slowly the milk.
- Keep turning it around with a wooden spoon boiling it on low temperature. It will thicken and you can put temperature higher to accelerate but slowly still.
- When it becomes a liquid paste all together you can pour it over the steamed cauliflower set in a dish to go to the oven and mash it all together.
- You could add some ham in little pieces if you want.
- Then mix the sour cream or crème fraîche in it, spread the cheese, salt, pepper and nutmeg all over the dish.
- Put in the oven for 20 mns on 400 Fahrenheit. Et voilà !
